In the Montilla-Moriles area, the New Tinaja White Wine stands out for its fresh, smooth and aromatic taste. The name comes from the large cement pots or tinajas de cemento that were used for traditional fermentation. It was drunk directly from the pot, breaking the veil of flor with the glass, and accompanying it with products from the land. It is a white wine not aged in wood, created from organic Pedro Xim\u00e9nez grapes, totally natural, not requiring added alcohol due to its high sugar concentration which upon fermentation reaches 14-15% alcohol content completely spontaneously.<\/p>\n

Held up to the light it is a pale, yellowy green wine, clean and clear, and fresh on the palate with a fruity flavour that hints at the recent wine harvest, and a light carbon persistence from the natural fermentation. It was traditionally employed as the basis for the other Montilla-Moriles D.O.P. wines; for this reason it is the least known, but also the first that can be drunk, as soon as three months after the harvest.<\/p>\n

From 2003 the Regulatory Board of the D.O. officially recognised this type of wine, which received the definitive boost for its production and sale. According to wine experts in the area, the New White Tinaja Wine may be the best option to begin discovering the wines of our Montilla-Moriles area: A wine that seduces! <\/strong><\/p>\n<\/div>\n<\/div>\n
